Remove/Replace part of a File Name

I'm a rookie having a tough time with this. I need to convert all the file names from the first format to the second. I want to replace the part in red with the part in blue. The part in red will be different for each file. I need to keep the rest, which is different on each file, including the date on the front and the seat locations (632 F 13)

08-20-16 Houston Texans vs New Orleans Saints 632 F 13.pdf to

08-20-16 Houston Texans - NRG Stadium 632 F 13.pdf

Will " vs " always be there?
Is "NRG Stadium" fixed or does that vary?
